A vegan take on my grandma's family ambrosia salad recipe. Make sure you use full-fat coconut cream.Ingredients | Romertopf Vegan3 ounces gelatin-free jel dessert mix1 (15.25 ounce) can fruit medley salad1 (15 ounce) can mandarin orange slices1 (4 ounce) jar maraschino cherries1 cup chopped walnuts1 (14 ounce) can coconut cream½ (10 ounce) package vegan mini marshmallows (Optional)DirectionsPrepare gelatin-free jel dessert according to package directions and pour into a mold. Refrigerate until firm, about 4 hours.Combine fruit medley salad, mandarin slices, maraschino cherries, walnuts, and coconut cream in a large bowl. Mix until evenly combined.Remove gelatin-free dessert from refrigerator and cut into small cubes. Add cubes and marshmallows to the fruit salad mixture and mix until well combined.
